FUNKY CAKES in GOA

I was invited for my friend's son's christening party. I had not met her in ages, let alone made her aware of the fact that I bake cakes. So as a surprise I baked her a moist chocolate cake and iced it for the occasion.  Since it was a baptism party I kept it simple. Here's a peek...

My lovely cutie wanted a Rapunzel Birthday Cake. It was a very busy day when I had to assemble the cake and just had 1 n a half hours time to do it. It was a moist chocolate cake with chocolate cream. Here's the outcome.....

Who doesn't love a challenge? And putting one's skills to use is really awesome. I had a Confirmation cake to prepare for my cousin's daughter. She wanted a white cake. I made a rosary, a cross, a dove and a Bible. The inside flavours were a surprise. I made a moist lemon cake, divided it into two layers and a white cake.  I used salted caramel frosting for the bottom layer, then placed the white cake with lemon cream cheese and used whipped cream for the outside frosting. I drizzled the lemon cake with lemon syrup. It was a nice combo. Soft, moist, lemony, creamy and delicious.  

I'm back! I have been away from my blog for a long time as everything kept me busy. I made the above cake for my father in law for his birthday. The inside is a fruit cake. Any comments???

I baked a moist chocolate cake for a neighbour, a 10 year old's birthday. Since I wanted to do something different, I decided to crush vanilla wafers and use it to decorate the cake. Some of the wafers went missing before the cake was cut.

I love to experiment with recipes. So when the banana doughnuts turned out great. I wanted to try baking the same batter as I had some of it left. So I decided to make bread. All I did was preheat the oven and bake them for around 20 mins.   Brushed the tops with egg. The result was obviously good.

I wanted to make doughnuts for ages now. I never did find a recipe to my liking and then I can across this wonderful recipe for old fashioned cake doughnuts by karalalala. It's simple, easy, quick, uncomplicated and delicious. I added mashed ripe banana to the recipe and made banana doughnuts. Here's a pix: Dusted them with icing sugar and you just don't stop at one..  

I wasn't feeling myself as I hadn't baked recently. So decided to make Red Velvet Cupcakes.  My girls had a great time devouring them. I kept some aside and iced them with soft and yummy frosting.

My mum had the flu and for being a wonderful lady she deserved a wonderful cake for her birthday. So I went ahead and made her a brandy and whiskey cake and I used premium products. And the result was awesome. And since she loves nuts. I sprinkled toasted cashew nuts and walnuts over the cake.

I love to experiment with cake recipes. I will never follow a recipe to the 't'. I made a red velvet cake. I had never used cream cheese for a filling and I always wanted to use it. And as the cake gurus go, there's nothing more complete than a red velvet cake with cream cheese frosting....yummmmmmmm. I was wondering what to frost over the cake and one of the recipes that I had tried earlier was a soft and delicious and melt-in-your-mouth icings. And you can imagine the outcome.....  

I had to prepare an engagement cake for a close relative. I made a death by chocolate with toasted walnuts in the filling and it was tres delicious.    

I always wanted to make a naughty cake and I had the opportunity when a friend's daughter was getting married. My joys had no bounds.Some thoughts later, this is what I came up with. Since she loves chocolate, I made her a chocolate cake.
