FUNKY CAKES in GOA

Now is the season for a variety of fruits to choose from. It's was my darling's 35th birthday and I wanted to venture away from my regular chocolate cake. So I decided to do something really different and made a moist white cake. I layered it with fruits: fine slices of green grapes, purple grapes, strawberries, mango and  figs. Here's the big cake for my big man. It was loved by all.

Honestly speaking when there are no cakes to bake I get bored..really bored... It was a neighbour's birthday. His cake was ordered somewhere but I wanted to make him something special as he had just purchased his first car. I had to ice the cake in a hurry ...like in 2 hours finish decorating. I've been meaning to make prawn rissois after years altogether. I found the recipe in Joyce's (the famous Goan cookbook writer) Recipe Book. I tweaked it with some additions here and there and the rissois were scrumptious .

My cousin loves mango cake. So decided that I would make something different for her birthday. A cake as well as a dessert. I had made the tres leches cake before so decided to incorporate mango flavour. The outcome was delicious. Here are some pics. This recipe is really worth a try. Holler if you want it.  

After the BLACK DOG Bottle cake I prepared, this is my attempt at a Johnnie Walker Whisky bottle cake. The recipe that I used contains no chocolate as my earlier whisky cake recipe . I made use of printed sheets to achieve the bordered flower design on dark chocolate. There are white chocolate curls in the box. This cake recipe too got finger licking results.

I love Donna Hay's cooking. It really is fast, fresh and simple. Saw one of the recipes she used to make a souffle and tweaked it a bit. Instead of goat's cheese I used paneer and instead of fresh breadcrumbs I used self raising flour. And the result was a soft and really yummy cake.  You can see and taste bits of the paneer. It sure is one of a kind and I loved the outcome.  

I didn't want to make a cake for my birthday party. But everyone was expecting it so I went ahead with a Lime Cheesecake. I don't have a pic of the whole cake but of what was left at the end. It was my first time using Mascarpone. I used curd too. And the result was good. Everyone loved it.

My birthday wasn't as usual as I was down with cold. But I did manage to make a pineapple upside down cake. The cake was moist and soft.  

I get busy and there's no sign of me. Had a cake to prepare for my cousin's lovely baby SARAH. And it was an absolute joy getting it all set. Here are some pix. Do comment...  

Every now and then, there is someone who desires cake. So I end up baking more than usual just to satisfy these cravings...be it mine only...... Yesterday I made Choco-chip cup-cakes using a book recipe. Here's the outcome: The verdict - soft chocolatey cupcakes . In a tin, I placed banana slices, topped with walnuts and used the same batter to make something different. And the result was good.

I've been away from my blog for an awfully long time as my computer was giving nasty problems. Now that's sorted and I'm back. Here's what I have been upto... Prepared this flourless chocolate cake using a recipe I found online. It is truly meant for the serious chocoholic. I loved it and with a scoop of vanilla ice cream it was just divine.

Finally managed to get my computer system working and I can now write on my blog. Made a surprise birthday cake for a dear friend who loves his whiskey. Tried my hand and used a whiskey cake recipe for this one. Enjoy.....

My darling princess wanted a princess/ Barbie cake for her 5th birthday. My first attempt at a doll cake was for a 1 year old's birthday party. My second attempt after 2 days was for my darling daughter's birthday party. Bought the doll and covered it in clingfilm and foil and then inserted it into the cake. The cakes were cut in the middle to allow the doll to stand. A technique I found being used by another baker.

When I offer to make cakes there are some requests I get that are unheard of to me. My kids love their cartoons but this one was totally unfamiliar to me. Doremon. He's pretty popular though..Wonder how could I have missed out on that?

Tried my hand at the well known Neapolitan cake. The base layer contains coconut and the top layer pink colour. It has a really nice flavour and the recipe that I used does not contain baking powder or baking soda. I prepared a moist chocolate cake without using butter, not even in the frosting. And I made two chocolate wine bottles.

My neighbour's daughter loves her teddybear. So for her birthday I decided to make her a TeddyBear cake. I prepared a chocolate cake using a new recipe that I found on the internet and by far this is the most moist and delicious chocolate cake I have ever eaten. I sliced the cake horizontally. Put a layer of mixed fruit jam and then added a layer of whipped cream. Just delicious and yuummmmm

I wanted to surprise a young relative with a cricket set cake. So I made him a cricket bat, ball, leg pads, hat, jersey and the works. Since he likes Sachin, I used a picture as a score board. The result..see.... I used a moist vanilla cake recipe which I found online. After reading the reviews, I decided that it was the right cake to prepare. But I was disappointed when I tasted the final result. The cake was tasty but not at all moist. Will never try that recipe again.

A kiddies birthday party is always so full of fun. And to have a cake as thrilling is a joy. It was Dennis's 6th Birthday party and he's so into monster jeeps. So made him a cake with huge tyres. My art may not be perfect but it achieved the desired results. Any comments guys?? The cake wheels were a tangy lemon flavoured cake. The main body was lemon cake and simple chocolate cake.

My mama loves her fruit cakes. It was her birthday and she wanted one. She had soaked fruit with rum and candid peel and gave it to me to use. I used a Carribean Recipe that I found online. The taste was amazing, though I didn't manage to get the black colouring. And I used marzipan icing to cover the cake. I used food colours and icing sugar to decorate the cake. Overall Delicious.
