As I mentioned yesterday, I tried making lamingtons. I made the cake first as the recipe specified. And then cut it into squares.

I cooled it overnight in an airtight container and next morning I was ready to coat it.

Here are the cut squares ready to be coated with cocoa icing and shredded coconut. I placed thim on a cake grill and placed another flat tin down to catch the dripping.

The end result. I do hope my niece's birthday party guests enjoy them as I did when I tasted.
