ORANGE FRESH FRUIT CAKE
For mum's birthday, this year I made her an Orange Fresh Fruit Cake. I prepared the cake using fresh orange juice. The resulting cake was moist and soft. I cut the cake into two, and layered it with whipped cream and purple grapes, kiwi and strawberries. The combo worked well.
The last combo I had tried was using Pineapple cake with fresh fruit and it was really finger-licking good.

INGREDIENTS
1. White Flour 2 cups
2. Finely ground Almonds ½ cup
3. Butter softened 1 cup
4. Granulated sugar 1 2/3 cups
5. Eggs at room temperature 5 nos
6. Baking Powder 1 tsp
7. Orange juice 1 orange
8. Salt ½ tsp
9. Orange colour (optional)
METHOD
1. Preheat the oven to 180°C .
2. Butter and flour a cake tin or line with butter paper.
3. Sift the flour, baking powder, salt into a bowl.
4. Stir in the almonds.
5. In a separate bowl, beat the butter, sugar in a large bowl until creamy.
6. Add the eggs, one at a time, until blended after each addition.
7. With mixer at low speed add the dry ingredients, orange juice and orange colour.
8. Spoon the batter into the pan. Bake for 50 mins or until toothpick inserted comes clean.
9. Cool the cake in the pan.
Serving Suggestions:
1.You could also drizzle the cake with orange juice.
2. You could make orange butter cream.
3. You could also make orange custard and layer it between the cakes.
4. Mix granulated sugar and orange juice and pour it over the how cake. You get a nice crunchy bite.
